Warm scrambled eggs.

Ingredients:~
8/9 quail eggs.
2 finely chopped spring onions.
1 tbsp chopped coriander (fresh if possible).
1 tsp vegetable oil.1 knob of butter.1 small tomato, finely chopped.1 garlic clove, finely chopped.
½ green chilli, de-seeded and finely chopped¼ onion finely, chopped.
A dash of Tabasco for extra oomph ~ if required!!
Salt to taste.

Instructions:~
Heat the oil and butter in a small non-stick frying pan. Add the onion and fry until soft.
Beat together the rest of the ingredients in a bowl and pour into the pan and scramble as normal. Take them off the heat when they are cooked to your taste.
Serve with/on toast.
Makes and ideal accompaniment to bacon, sausages, black pudding, mushrooms and grilled tomato.
Serves 2 comfortably.
